Remember my Fudge Pie recipe that I shared on Friday as being my favorite dessert; if not refer back to this post for the recipe! Well today I made Mini Fudge Pies!
We have our monthly moms meeting at church tonight and I signed up to bring a dessert. I was trying to think about what to bring and since I posted The Fudge Pie on Friday I have been wanting one but pies and cakes really don't get eaten at "get togethers" b/c people tend to eat more "pick up stuff" so I racked my brain and did a little research and came up with these little guys!
So here is how i did it in case you want to make them...
Make the pie filling according to the recipe (from above) except don't pour it in a pie crust. Instead do this...
I bought the rolled pie crust in the dairy section (by the biscuits, cookie dough etc)... you know come two rolls in a box. Unroll it and use something small to make circles. I am sure they make some great little baking tool that would work fabulous but i just used a top to one of the kids sippy cup and it worked great. Cut out dough circle and place them down in mini muffin pans (I lined mine with cute little fall cupcake liners but I don't think you would have too). Pour the pie filling into each of the mini pie cups (almost to the top; but still be able to see the pie crust around the edges). Bake on 350 for about 12 to 15 minutes. This made 36 mini fudge pies!
Sidenote: when you cut out the circles you will have to put the dough back together and then roll it back out to make more circles (i used a glass; i mean seriously who has a rolling pin these days; i would love to know who in their early 30's has a rolling pin???)
